Instructions
In a medium pot, stir together apples, raspberries, sugars, cinnamon, salt, and apple juice.
Bring to a simmer over medium heat, cover, and reduce heat to low.
Cook, stirring occasionally, until apples begin to soften but still retain their shape, about 15 minutes.
Add the slurry to the filling mixture, increase heat to medium, and cook for 1 minute until thickened.
Remove from heat and cool to room temperature.
Unroll pie crusts and cut into 12 4-inch circles, re-rolling scraps as needed.
Place 1 tbsp of filling in the center of each circle, brush edges with water, fold, and press to seal.
Crimp edges with a fork, brush with egg wash, and pierce two small slits in the top of each pie.
Sprinkle tops with sugar.
Preheat air fryer to 320ºF and bake pies in a single layer, 6 at a time, for 15 minutes until golden.
Remove to a wire rack to cool and repeat with remaining pies.
Pro Tips
Do not overfill the handpies to prevent them from bursting during cooking.
Refrigerate the unbaked pies while waiting for the first batch to finish so the dough stays firm.
Ensure the filling is cooled to room temperature before assembling to keep the dough from becoming too soft.
