Instructions

Step 1

Cut the pork in half crosswise, then season all over with salt.

Step 2

In a bowl, combine gochujang, garlic, honey, oil, and ginger.

Step 3

Transfer 1/4 cup gochujang mixture to a small bowl and stir in vinegar; set aside for serving.

Step 4

Add pork to the bowl with the remaining sauce and toss to coat.

Step 5

Place pork in the air-fryer basket and cook at 350°, turning occasionally, until pork is golden brown and an instant-read thermometer inserted into the thickest part registers 140°, about 16 minutes.

Step 6

Let it rest for 10 minutes before slicing.

Step 7

Place pork in lettuce leaves, along with cucumber, scallions, and rice.

Step 8

Serve with reserved sauce alongside.
