Instructions
In a medium heatproof bowl, whisk broth, soy sauce, brown sugar, cornstarch, and wine.
Microwave on high, stirring halfway through, until sauce is thickened.
Stir in oil and season with a few grinds of black pepper.
In another medium bowl, toss steak with garlic, soy sauce, cornstarch, ginger, and wine.
Let sit for 5 minutes.
Add broccoli and oil to the steak mixture and toss to combine.
Arrange half of the steak and broccoli mixture in a single layer in an air fryer basket.
Cook at 400° until steak is just cooked through and broccoli is tender and golden in spots.
Scrape cooked steak and broccoli mixture into the bowl with the sauce.
Repeat with the remaining steak and broccoli mixture, then toss everything to coat in the sauce.
Sprinkle with scallions and sesame seeds and serve over rice.
Pro Tips
Cut the steak against the grain to ensure the meat remains tender.
Letting the steak marinate for 5 minutes helps the flavors penetrate the meat.
Cook in batches to ensure the steak and broccoli cook evenly in a single layer.
Use dry sherry as a substitute for Shaoxing wine if needed.
