Instructions
Cut pork belly into 4cm pieces and place in a bowl.
Combine sugar, paprika, flour, onion, and garlic powder in a bowl, then sprinkle evenly over pork and toss to coat.
Place in the fridge for 2 hours, leaving uncovered so the pork dries out.
Preheat air fryer to 200°C.
Spray pork liberally with oil and season well.
Place half the pork in the air fryer basket and cook for 15 minutes, shaking halfway through, until charred and cooked through.
Transfer to a bowl and repeat with the remaining pork.
Prepare the sauce by combining butter, golden syrup, barbecue sauce, bourbon, and sriracha in a saucepan over medium heat.
Cook, stirring, for 2 minutes until smooth, then simmer for 3 minutes until thickened.
Drizzle the sauce over the cooked pork to serve.
Pro Tips
Do not cover the pork while chilling in the fridge to allow the surface to dry out for better crisping.
Shake the air fryer basket halfway through cooking to ensure even browning.
Cook the pork in batches to avoid overcrowding the air fryer basket.
Adjust the amount of sriracha if you prefer a milder or spicier sauce.
