Instructions
Heat the air fryer to 325°F.
In a large bowl, whisk together eggs, Worcestershire sauce, salt, and pepper; stir in panko and let sit 2 minutes.
Stir in onion, garlic, and parsley.
Add beef and mix until just incorporated.
Shape beef mixture into three 5- by 3-in. loaves and place on the air fryer rack.
In a small bowl, stir together ketchup and balsamic vinegar until combined.
Transfer 2 tablespoons of the mixture to a second bowl and set aside.
Brush tops and sides of loaves with the remaining ketchup mixture, then air-fry until internal temp registers 150°F, about 13 minutes.
Brush with reserved ketchup mixture and let rest at least 5 minutes before slicing.
Pro Tips
Let the panko mixture sit for 2 minutes to ensure it absorbs the liquid for better texture.
Mix the beef until just incorporated to avoid a tough meatloaf.
Resting the meatloaf for at least 5 minutes before slicing helps keep it moist.
Use a meat thermometer to ensure the internal temperature reaches 150°F.
