Instructions
Heat the air fryer to 370°F.
In a shallow bowl, mix panko, oil, and 1/2 teaspoon each of salt and pepper.
Air-fry the breadcrumb mixture, stirring twice, until golden brown, then set aside to cool.
Increase air fryer temperature to 400°F.
Place flour in a shallow bowl and beat eggs in another.
Season chicken strips with 1/8 teaspoon each of salt and pepper.
Coat each chicken strip in flour, then egg, then the toasted panko, pressing gently to adhere.
Working in batches, air-fry the chicken in a single layer, flipping halfway through, until golden and crisp.
Whisk together mayonnaise, barbecue sauce, mustard, honey, lemon juice, and vinegar in a small bowl to make the sauce.
Serve the chicken strips with the prepared sauce.
Pro Tips
Toast the panko breadcrumbs before coating the chicken to ensure a golden, crispy texture.
Press the panko firmly onto the chicken to help the breading adhere properly.
Work in batches to ensure the chicken is cooked in a single layer for even crisping.
Ensure the air fryer is preheated to the correct temperature before adding the chicken.
